Tacos al Pastor (Mexico)

Recipe: Tacos al Pastor

Ingredients (Serves 4):

For the marinade:

  • 500g pork shoulder, thinly sliced

  • 2 dried guajillo chiles, deseeded

  • 2 cloves garlic

  • 1/2 cup pineapple juice

  • 1/4 cup white vinegar

  • 1 tsp dried oregano

  • 1/2 tsp cumin

  • 1/2 tsp smoked paprika

  • 1 chipotle pepper in adobo (optional for heat)

  • Salt and pepper to taste

For the tacos:

  • Corn tortillas

  • 1/2 fresh pineapple, diced

  • 1 small red onion, chopped

  • Fresh cilantro, chopped

  • Lime wedges

Instructions:

  1. Make the Marinade:

    • Soak guajillo chiles in hot water until soft (about 15 mins).

    • Blend with garlic, pineapple juice, vinegar, oregano, cumin, paprika, chipotle, salt, and pepper.

  2. Marinate the Pork:

    • Coat pork slices with the marinade.

    • Cover and refrigerate for at least 4 hours (overnight for best flavor).

  3. Cook the Meat:

    • Grill or pan-fry the pork until nicely charred and cooked through.

    • Slice into thin strips.

  4. Assemble the Tacos:

    • Warm tortillas.

    • Add pork, diced pineapple, onion, and cilantro.

    • Serve with lime wedges.
